Jessie at The Vanderbilt Wife is hosting a carnival for Family Recipes. As she points out, family recipes are usually the best – tried & true!! When I think about recipes in our family the very first one that comes to mind is my grandmother’s Broccoli Casserole. We do no, absolutely do NOT, celebrate anything without this side dish! It’s on the menu for every Christmas, Easter, Thanksgiving & important celebration in between! I actually just served it for Megan’s Dedication this past Mother’s Day!
Alot of Broccoli Casseroles have rice in it, this one does not … I think that’s why I like it!
Here’s what you need:
2 pkgs of frozen chopped broccoli
2 eggs, well beaten
1/2 cup mayonnaise
1 can cream of mushroom soup
1 T. Instant minced onions
1 cup sharp cheese, grated
Salt & Pepper to Taste
1 can fried onion rings (crushed for topping)
Here’s what you do:
Cook broccoli by itself & drain. Mix with rest of ingredients (minus toping). Put in baking dish. Pour topping – on top (duh). And bake at 350 for 45 minutes.
