The Chili Recipe … that you’ve been ‘waiting’ for!

To finish my post from last night … I prefer a hearty chili with lots of veggies, so if that’s not your cup of stew then you may not especially like this one.

1 lb ground beef, 1 medium onion (chopped), 1 medium green pepper (chopped), 2-3 teaspoons of ground cumin &/or 1 packet of chili seasoning, 1 teaspoon salt, 1 can (14-1/2 ounces) Mexican stewed tomatoes, 1 can (15-3/4 ounces) chili beans in gravy, 1 can (15-3/4 ounces) kidney beans, 1 cup/can of corn, 1 small can of tomato sauce (optional … just depends on what consistency you prefer)

Cook beef until the meat is browned.  Drain.  While meat is cooking, cook vegetables & seasoning in separate pot over medium heat.  After meat is done, add to vegetables.  Cover & simmer until everything’s tender.  Pep usually steps in for additional seasoning at this point!! 

I prefer to serve topped with fritos, cheese & sour cream!

    I love chili over rice. YUM. Les usually cooks ours. I think we just do beans, meat, chili powder, hot sauce and tomato sauce. Yours sounds yummier!

    Which packet of chili seasoning do you buy? Or does it matter?

    2 lb ground sirloin
    3 large cloves garlic-chopped
    drizzle of olive oil
    1 large onion chopped
    1 large green pepper chopped
    1 28oz can of whole tomatoes-broken
    1 15oz can of red kidney beanes-drained
    1 tsp dried oregano
    1 tsp ground cumin
    1 tsp chili powder
    salt/pepper
    sharp cheddar cheese
    hot sauce
    saltine crakers or crusty Italian bread/buttered

    Brown the ground sirloin using the OO as a starter. Add the chopped onion/pepper. Add the dry spices. Stir. Add the tomatoes with the juice. Let all of this simmer on low for a good hour or more. The last 15 minutes add the drained red kidney beans. Serve topped with sharp shredded cheddar cheese and sprinkle on your favorite hot sauce. Serve with crakers or bread. Good Stuff!!
